Fermentation
Once the wort is cooled and transferred to the fermentation tank, the
yeast is added to begin fermenting. The yeast metabolize the sugars extracted in the mash, producing ethanol and carbon dioxide as waste products. In addition, the yeast produce flavors that can enhance or degrade the quality of the beer. The fermentation usually lasts about one week. Once the fermentation is completed, the yeast is racked off and the beer is aged a period of time depending on the style. After sufficient aging, the beer is transferred to a bright tank where it is carbonated.
